September Salad

SeptembersaladIt is still pretty spicy outside here in Southern California! September has definitely brought on some heat. When it is hot, cooking is the LAST thing I want to do. I want something fresh. Now I am all about spicing up my relationship with veggies, because I used to think salads were the only way to eat healthy (not true), and then they got boring. Well, lately I have been on a recipe roll! I made a salad for this week that is TOP NOTCH, and I have to share. Salads don’t have to be boring, AND, I’m realizing, that homemade everything is better tasting and better for you anyways. Sharing the recipe below, not giving amounts because that’s up to you 🙂 Comments & questions welcome!

September Salad:

Ingredients-

  • Arugula (or your choice of leafy greens)
  • Red grapes (or green if you prefer)
  • Avocado
  • Dried cranberries

For the dressing-

  • Olive oil
  • White Vinegar
  • Balsamic vinegar
  • Lemon juice
  • Salt
  • Pepper
  • Garlic powder
